Mohawk Valley Trading Co. honey is raw,
unstrained, unheated, unblended, and totally unprocessed. Therefore,
all of the pollen, live enzymes, propolis, vitamins, amino acids,
antioxidants, minerals, and aromatics are in the same condition as
they were in the hive. As such, it will crystallize over time. To
soften or liquefy, place the jar in warm water.
Crystallized raw honey will usually have a
slight layer of white foam on the surface, marble-like swirling or
white spots in the upper sides of the jar, which is caused by air
bubbles that have risen to the top. This is a sign that the honey
has been packed without heating.
